Holy Gaucamole!

Let's continue on this Mexican food theme for a little while longer, shall we?  I will whole heartedly admit that avocados are one of the true loves of my life.  Really, its getting pretty serious, I've even started putting them in my homemade popsicles...but that's another recipe for another day.  Like I've mentioned before, I swoon over Mexican food.  What's my favorite part about Mexican cuisine you ask?...guacamole.  Hands down, guacamole is the best part of a Mexican feast.  This recipe from PaleOMG gives a sweet twist to the usually tangy appetizer by incorporating plantains into the mix (see picture below).  I was skeptical at first because how much better could guacamole actually get, right?  Let's just say I was pleasantly surprised!
