Following a diet... or sick of the same ol' ?  Here are a few simplified salad ideas that will fill you up and are easy to prepare for your work-week lunch! 

Start with a greens and veggies base:  If you are a Trader's Joe's fan like we are then you have hopefully discovered the Healthy 8 Chopped Veggie Mix.  Perfectly packaged for your convenience, prep work completed,  easy to eat, grab and go... 

Pile-on all your favorites!  

High Protein, Low-Carb : Add almonds, hard boiled eggs, grilled chicken
