  • 1/3 cup organic coconut flour
  • 4 egg whites or 3 with several tbsp water
  • 2 tbsp ground flaxseed
  • 1/4 tsp cumin
  • 1/8 tsp red pepper flakes
  • 1/8 tsp garlic powder
  • 1 tsp baking soda

  1. Mix all ingredients together and form into a circle, about 1/4 inch thick, making a small edge around the outside for a crust on a large, flat, oiled sauté pan or grill
  2. If the crust starts to break, brush some water onto the dough and use a spatula to help form the rounded outside
  3. Heat on medium until brown (3-4 minutes), then flip to finish cooking (1-2 min)
  4. Add toppings and bake in the oven at 400℉ for 5-6 minutes

  • 5 small naan breads (or pita, flatbread, pizza dough)
  • 1 cup goat cheese
  • 1/2 cup of pesto
  • 1/2 red onion (or to taste)
  • bunch of basil
  • 2 tomatoes
  • 3-4 cloves of minced garlic
  • 1/4 cup of candied walnuts
  • drizzle of olive oil and balsamic vinaigrette (optional)

  1. Preheat the oven to 400 degrees
  2. Layer a sheet pan with tin foil or spray with cooking spray. Chop up tomatoes, red onions and garlic. Caramelize the red onions by dizziling a pan with olive oil and cook on low until transparent. Spread pesto on the naan bread and then crumble to goat cheese on top. Layer with tomato, onion, garlic and walnuts.
  3. Cook in the oven for 12-15 minutes. Top the pizzas with basil and drizzle with olive oil and balsamic vinaigrette.
